  1. For potato masala, heat oil in a pan. Add mustard seeds, cumin, asafoetida let it splutter. Add curry leaves and green chilles and saute for 30 sec. Add boiled potato and mash well. Add turmeric powder, red chilli powder and salt and mix everything well and cook for few minutes.
  2. Add chat masala and chopped coriander leaves. Mix well and cook for 2-3 minutes more. Once done transfer the mixture in a bowl.
  3. Take a bread slice. Spread the butter evenly on it. Spread green chutney. Now spread the potato filling on the bread slice.
  4. Grate some cheese over the filling. Take another bread slice. Apply butter and coriander chutney and place over it.
  5. Again apply butter and coriander chutney over the second bread. Now place the slices of cucumber, onion, tomato, capsicum and beetroot. Sprinkle some chat masala and salt to taste.
  6. Take the third bread. Again repeat the same procedure. Apply butter and coriander chutney over it. Place a cheese slice on the top. Cover the vegetable slice with the cheese slice.
  7. Grease the preheated grill pan with some butter and place the sandwich. Toast the sandwich from both the sides till crisp and golden.
  8. Remove the sandwich from the pan. Cut it diagonally. Spread some grated cheese over it. Garnish it with coriander leaf. Serve with coriander chutney, tomato ketchup and mayonnaise.
