  7. 1 tsp panchforan
  8. 1 bay leaf (tejpatta)
  9. 2 green chilli chopped as per taste
  10. 1 onion chopped
  11. 1 tbsp ginger-garlic crushed (optional)
  12. 1 carrot, grated
  13. 1 beetroot, grated
  14. 1 handful green peas
  15. 2 tbsp tomato paste
  16. 2 boiled potatoes, mashed
  17. 1 tsp roasted Cummin powder
  18. 1/2 tsp black pepper powder
  19. 1 tsp chaat masala
  20. 1/2 tsp black salt
  21. 1/2 tsp White salt or to taste
  22. 2 tbsp chopped coriander leaves
  23. For roasted paneer..
  24. 100 g paneer
  25. to taste Salt
  26. 1/2 tsp chaat masala
  27. 1/2 tsp black pepper powder
  28. 1/2 tsp oregano
  29. For green chutney..
  30. 1 cup coriander leaves
  31. 3 cloves garlic
  32. 1/2 inch ginger
  33. 2 green chilli
  34. 2 ice cubes
  35. to taste Salt
  36. 1/2 tsp olive oil

Instructions to make Bombay Beetroot Masala (BBM)Sandwich with Paneer

  1. Heat mustard oil in a kadhai or pan splattered panchforan, add bay leaf and chopped onion. cook till onion get transparent. Keep the flame on medium.Now add crushed ginger-garlic
  2. Cook for a minute then add chopped capsicum, grated carrot and beetroot.
  3. Mix all and cook for 2 minutes. Add peas and tomato paste. Then add Cummin powder, chaat masala, black pepper powder, black salt and white salt. Cook for another minute. Now add mashed potatoes.
  4. Mix all together well and for 2-3 minutes or till potatoes leave the pan sides. Now add chopped coriander, mix herbs and green chilli. Beetroot masala is ready. Keep it aside.
  5. Meanwhile Cut paneer in sticks.
    Heat 1tbsp butter in a nonstick Pan, keep the flame on medium-high, add paneer cook for a minute. Then add salt, chaat masala, black pepper powder and oregano. Roast paneer sticks till it turn golden. Keep it aside.
  6. For green chutney add all ingredients in a grinding jar. Grind all to make a fine paste. Chutney is ready.
    Tips..always add 2 ice cubes with green chutney to make it perfect green.
  7. For 2 sandwiches take 4 slices of bread, spread butter evenly over each slices. Spread green chutney and place 2 paneer sticks in 2 bread slice.
  8. Now spread prepared beetroot masala, place a slice of onion, tomato and beetroot. Now sprinkle grated cheese over it.
  9. Now sandwich it using another bread slice with the buttered and side downward and press it lightly.
    Spread some butter evenly over it.
  10. Heat a Tawa. Put some butter for cooking and place the sandwich on it with the buttered side facing upward. Cook on a medium flame till it turn golden from both sides. Similar make all Sandwiches.
  11. Cut the sandwiches diagonally in 2 equal portion and serve hot with green and red Chutney. Enjoy
